Dairy and Egg free Pancakes.

After all of the Christmas and New Year eating it’s finally time to start eating healthy again. I still have cravings for something sweet in the morning but since it should be healthy I’ve decided to make those easy, fast, dairy and egg free breakfast pancakes.

You’ll need:
500 g of all purpose flour (sifted)
50 g sugar (sifted)
15 g baking powder (or 1 pouch)
460 ml (or 2 cups) of water

Simplest recipe:
Stir together flour, baking powder, sugar and lukewarm water, let the batter sit for 10-15 minutes. Meanwhile preheat the non stick skillet on a medium heat. Pour small amount of the batter onto ungreassed pan forming the round shape (little pancake).
Note: because of the baking powder they will start growing once touched with heat, so you can flatten them with spatula. Cook 3 minutes on both sides, until golden, golden/brown.
Serve with fresh berries, yogurt or like I did with maple syrup.

    One thing that annoys me is that they never go the whole nine yards. If it's dairy-free, it's full of sugar. If it's sugar-free, it's white flour. If it's whole flower, it's fatty. If it's low-fat, it's high-cal. If it's low-cal, it's high-cholesterol. &etc.

    Can these be made with whole flour instead of the all-purpose (white) flour, and can we dispense with the sugar altogether? (or possibly replace it with a sweetener?)
