This is one of the easiest, fastest and tastiest bake recipes that I’ve ever done. The cool thing about it is that you can use it for both sweet and salty recipes. I’ve tried it for the first time and we had to stop ourselves not to eat everything once it was baked. I’m still thinking to try sweet mini galettes for the breakfast and will definitely share the result with you.
Now for the recipe, you’ll need:
for the dough
200 grams of flour
100 grams butter
5 table spoons of cold water
1/2 teaspoon of salt
for the filling
4 hard boiled eggs
150 grams of green onion (chopped)
100 grams of feta cheese (crumbled)
1 egg white
for the decoration
1 egg yolk
3 teaspoons of sesame seeds
Mix the flour, salt and butter till the texture will resemble crumbs, add water and mix immediately. Form the dough into a ball and place in the fridge for 20-30 minutes. I usually cover it with plastic wrap, that way it can be kept longer (2-3 days), if you’ll put it in the freezer the dough can be used even after 2 weeks (make sure it’s room temperature when rolling).
Dice the boiled eggs into cubes and mix with crumbled feta and chopped onion, add egg white and set aside.
Preheat the oven to 400F.
Roll the dough on parchment into a circle (don’t forget to dust with flour at first), about 12 inches wide. It should be thin with uneven edges. Transfer parchment and dough to baking sheet. Fill with egg/feta/cheese mix, roll the edges and brush them with the egg yolk and sesame mix.
Put into over for 35 minutes, until edges are golden.
