What happens when you run out of eggs and forget to buy them, but have loads of banana that you need yo use – eggless banana bread! You’ve probably guessed that I love banana bread and in case if not, here are my previously posted banana bread recipes and variations of it.
In the process of writing, I’ve realized that this will be a quick post, as quick as this eggless banana bread making was. I guess the only new thing in this recipe is the addition of an insane amount of chocolate chips to satisfy my current cravings.
Eggless Banana Bread Recipe:
- 4 large ripe mashed bananas
- 1/3 cup olive oil
- 1/4 cup sugar (or as per your taste)
- 1 teaspoon vanilla
- 15 ml teaspoon baking powder
- 1 1/2 cups of all-purpose flour
- As much as you wish chocolate chips. I used semi-sweet Hershey’s Chipits.
Mix everything, spray the baking pan with coconut oil and bake 40-50 minutes on 350F. If the batter is too liquidy – add more flour, if it’s too dry – add olive oil.
I usually check the centre with the toothpick, if it’s dry – it’s ready.
As you guessed the substitute for eggs was one extra banana and olive oil.
