Linzer Cookies.

Yes, I finally did it! Baked cookies for the 5th time in my life and for the first time I did it perfectly!
I must tell you the truth – it is very time consuming recipe and I suggest you to do it when you have a lot of free time or just really really bored! But, there is always a but, they are SUPER delicious and you can store them for up to a month or two.

You can place the dough in freezer and keep it there for month (bake when necessary) or place in fridge and keep it for 2 weeks.
I did mine in 2 batches, first – larger and round, about 22 cookies, second batch – smaller and floral shapes, got about 45 cookies.
Once your cookies are baked you can either dust them with icing sugar and stick them together by using jam or leave them cooked and decorate when you want to.
After all the efforts and time spent I can tell you with pride – it was definitely worth it! Soft and sour sweet (if you’ll use seedless raspberry jam) perfect coffee or tea buddy and will look absolutely amazing if you’ll gift them to friends or family!

You can find the recipe here (I think it was the best one I found).

Tip1: Thinner cookies bake faster so no more than 8-10 minutes and take them of the baking sheet once removed from the oven, thicker cookies should be cooked as instructed – 11-12 minutes.

Tip2: Since the dough is really really sticky it’s better to roll it on the parchment paper and place plastic wrap on top – there will be no problem with rolling it.

Tip3: If it says freeze the batch before the baking – freeze it, believe me by doing so your cookies won’t burn or melt.
