Olive Bread: quick and easy non yeast recipe.

This was the first time when I did this thing and it turned out so damn good!
I will definitely try some variations of flavoured breads and maybe some ciabatta bread too.

You’ll need:

2 cups of all purpose flour
2 cups of whole-wheat flour
1 teaspoon baking soda
half teaspoon salt
1 or 1 1/4 cups buttermilk
1/2 chopped pitted green olives
2 tea spoons olive oil for greasing

How to:

Preheat oven to 400F.
Sift into a bowl flours, baking soda and salt (add all bran back), add buttermilk (start with 1 cup and add more later if needed). Add olives (make sure you dried them out in paper towel) and mix with dough.
Shape the dough into 7-8 inch circle, flatten on the baking sheet and cut a deep cross with sharp knife. Brush top with butter milk and bake for 35 minutes or more if needed. Make sure that loaf will be golden brown and sound hollow when tapped underneath.
Enjoy!

Oh yum! That looks so yummy. I bet the olive brings a really nice depth of flavor, and some saltiness too.
