As you all know, when you’re lazy doing the pie dough by yourself you buy it. Sometimes my husband prefers to do the grocery shopping on his own, since it saves his time and nerves as I spend way too much time running all around the store and buying all what I can see :))))
This time he decided that he will find the perfect pie dough by himself and failed since what I saw after he came back was the ready to bake pizza dough. It was a challenge for me from the beginning, but it turned out so tasty at the end that I decided to do several types of pies using that dough.
Pie N1, Ricotta and Dill.
I’ve used standard sized pie foil dish (94x36mm) and 650 grams “Ready Bake” pizza dough, which is perfect for 2 pies.
240 grams Ricotta cheese
30 grams cheddar cheese
chopped fresh dill – as much as you want
1 medium sized tomato (thinly sliced)
vegetable spice (I’ve used the following Club House spice)
1 tea spoon of olive oil for the coating
Simple and hassle free preparation.
Preheat the oven for 420F.
Roll out dough for the size of foil dish (you can read more here on how to Roll out Dough) and place it there.
In a medium bowl mix Ricotta cheese, 1 egg, cheddar cheese, dill and spices (sometimes I love something spicy, so I’ve also added little bit of Cayenne pepper). Gently spread the mix over the dough and add the sliced tomato on top. Coat the edges with the olive oil. Put it in the oven and bake for 15-20 minutes. Once ready, cool for 20 minutes and enjoy!
