Sometimes I just want to eat something sweet and soft but most of the in store things have too much sugar in them, I break out easily because of that so I’ve started to make my own desserts once in a while. Some time ago I was looking through one of the cookbooks and stumbled on Tiramisu dessert. I was lazy to make it and had mini graham cracker tarts and fresh strawberry and then I’ve decided to make Strawberry tarts with this precious cream!
Well it sounded like a challenge at first, but it turned out easier than I thought.
10 mini graham crackers tarts
1 small pack of fresh strawberry
4 egg yolks
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 cups mascarpone cheese
2 egg whites
To prepare the cream.
Beat the egg yolks with the sugar and vanilla extract in a heat proof bowl then set it over a saucepan of barely simmering water. When the mixture color will fade (should become pale) and become thicker remove the bowl from the heat and set aside to cool. Make sure you’ll beat the mixture occasionally to prevent a skin from forming.
When the mixture is cool, beat in the mascarpone cheese until thoroughly combined.
Beat the egg whites in a separate clean bowl until they form soft peaks, then gently fold them into the mascarpone mixture.
Gently place the cream in tarts and decorate with fresh strawberries.
