When I want to eat seafood at home and don’t want to spend tons of time on cooking I switch to my Tomato-Basil Mussels mood. I’ve been cooking it so many times for the past 3 years that I probably can do it with my eyes closed.
2 pounds of fresh, halved mussels
3 garlic cloves
3-4 big tomatoes
2-3 small shallot
jalopeno pepper (on your taste)
2-3 stems of basil
2 tea spoons of Worcestershire sauce
fresh crusty bread
Chop shallot and basil, finely chop the garlic, dice tomatoes, scrub the mussels.
Preheat the skillet on medium heat and fry the shallot until golden, add jalapeno pepper. Once slightly fried add tomatoes and stirring occasionally add salt and pepper. Once tomatoes will be cooked pour the mixture in medium sized pot and add basil. After 1 minute add mussels and cover the pot. Let it boil for 7 minutes stirring the sauce occasionally. Remove the mussels and serve to serving bowls. Stir remaining sauce, add Worcestershire sauce and boil for 2 more minutes.
Pour over the mussels and serve immediately with fresh bread.
